| Malaysian Beef Rendang "This dish has a unique flavour, and by varying the amounts of sugar and chilies a whole range of effects can be produced. Serve over rice."Prep Time : 30 minCook Time : 1 hr 30 minReady In : 2 hrsINGREDIENTS
- 3/8 pound shallots
- 3 cloves garlic
- 15 dried red chile peppers
- 5 slices fresh ginger root
- 5 lemon grass, chopped
- 2 teaspoons coriander seeds
- 2 teaspoons fennel seeds
- 2 teaspoons cumin seeds
- 1 pinch whole nutmeg
- 1 tablespoon vegetable oil
- 1 1/4 pounds beef stew meat, cut into 1 inch cubes
- 1 1/2 tablespoons white sugar
- 2 cups shredded coconut
- 5 whole cloves
- 1 cinnamon stick
- 1 2/3 cups coconut milk
- 7/8 cup water
- salt to taste
DIRECTIONS
- Heat the coconut in a dry wok, stirring continuously until golden brown. Set aside to cool.
- Using a blender or a food processor, blend the shallots, garlic, chilies, ginger, and lemon grass to a thick paste.
- Grind the coriander, fennel, cumin and nutmeg.
- Using the wok, fry the shallot paste in a little oil for a few minutes. Add the ground coriander, fennel, cumin and nutmeg; cook for 3 to 4 minutes, stirring continuously. Add beef; cook over a medium heat for a further 3 to 4 minutes, or until meat is browned.
- Stir in sugar, coconut, cloves, cinnamon stick, coconut milk , and water. Bring to a boil, lower heat, and simmer until most of the liquid has gone and the meat is tender (about 1 hour). Season with salt to taste.

| Issskkkk .. ni lah resipe yg sia paaaaaling suka makan .. apa lagi klu ko makan sama tu kolopis (sia ndak tau apa bah nama dia tu .. tapi sound dia begitulah) .. tapi resepi dia ni susah betul wooorr .. sia malas ndak pandai masak ni klu begini ... | |

| Tonight was the night to try the Beef Rendang recipe. Thankyou again Blueberry... it turned out YUMMY !!! I picked some fresh Lemongrass from my garden and set to work in the kitchen... | bongingtugarang... Lemongrass is not uncommon in gardens over here... many people who like to use it for cooking grow it. I think Lemongrass was probably introduced to Australia many years ago when asian people started to migrate to Australia... I have a large garden with a few Asian spices/herbs growing, also lots of fruit trees... Maybe I will make a post showing some pictures of my garden... perhaps in the Landscaping section would be best... | |

| This is the most traditional Beef Rendang recipe i found. Also by Betty Saw (why i like her because all her recipe is mainly malaysian recipe ..so the ingredients very easy to find...) Rendang Medan Ingredients
- 1kg Beef fillet, cut into cubes
- 1/2 teaspoon pepper
- 3 tablespoon cooking oil
- 500ml coconut milk, from 1 coconut (for a healthier food can be replaced with low-fat plain yogurt)
- 4 stalks Lemongrass (serai) smashed
Ground Ingredients
- 34 dried chillies, seeded & soaked till soft
- 2 large onions
- 3 cloves garlic
- 6cm piece galangal (lengkuas)
- 5cm piece ginger
- 25g dried tamarind (asam jawa paste) mixed with 200ml water & strained
- salt to taste
- 1 heaped teaspoon sugar
- 2 teaspoon sweet soya sauce (kicap manis)
- 2 tumeric leaves (daun kunyit) finely sliced
- 6 kaffir lime leaves (daun limau purut) finely sliced
Season beef with pepper.Heat oil in a non-stick saucepan until very hot.Brown beef for 3-5 minutes until it changes colour.Drain from oil and set aside. Pour coconut milk into the same saucepan.Add serai,ground ingredients and asam water. Return beef to pot and cook over medium heat,stirring frequently until gravy thickens.Stir in salt sugar and kicap manis and leaves.Stir frequently until gravy is thick and beef is tender.
